How Do I Defrost Products?
We do ship all products (with the exception of Dry Aged products and Salami) frozen and on dry ice. All products are frozen quickly at their peak freshness to ensure you get the best quality. Since we do ship frozen, order early and select a delivery date at least a week in advance to your special meal, to give you plenty of time to prepare!
TIP-give yourself more time than the below thaw times. All products have a shelf life of 1 week in the refrigerator if kept in original cryovac seal
Directions: Place your steak or roast on a plate and place in the refrigerator to slowly thaw. You will need at least 6 hours per pound of thaw time. Please note that thawing can take longer depending on the thickness of your cut. The reason for placing it on a plate is to prevent any potential juices from leaking out onto your refrigerator shelf. The seals should be intact, but if minimal leaking does occur, there is no harm to the quality or safety. Please see below for general thaw times:

In a pinch and need to speed thaw? Fill the sink with water and place the product in a cool water bath. It doesn't hurt to double bag just in case there is any damage to the original seal. This will cut the thaw time by more than half.
