Quick and easy. No special equipment is required.
1. PREHEAT & SEASON
Set oven to 350°F. Heat a heavy skillet (cast iron is ideal) over medium-high heat until hot. Add a thin layer of neutral vegetable oil, like grapeseed. Season steaks with salt and pepper or your favorite seasoning blend. Place steaks in the skillet.
2. SEAR
Sear steaks on each side for 2 minutes. If a steak sticks to the skillet, it’s not ready to turn. Wait until it releases on its own.
3. COOK
Place skillet in a 350°F oven for 10 to 20 minutes depending on the desired doneness. Turn once halfway through cooking time. Remove from oven when the preferred internal temperature is reached.
4. REST
Remove steaks from the skillet, tent loosely with aluminum foil, and rest for 10 to 15 minutes. The temperature will continue to rise about 5°F.
5. SERVE
Finish with a pinch of large flake salt and serve immediately.
