These are guidelines set by the USDA. Snake River Farms recommends cooking beef to at least 120 degrees for optimal flavor and texture. American Wagyu is forgiving due to its high-fat content, which means you can take it to a higher temperature and still get great results. Cooking to 130 degrees provides excellent flavors and textures. It is all about personal preference!
